Making Butter

Happy's recipe

For this recipe we are going to need 30 grams of grounded flower per pound of butter. The important note, butter does seem to burn easy so for this method you are going to need a double broiler. Once you have melted your butter down you sprinkle in the flower at a slower rate while stirring you while making sure that you are not overcooking/byrning your butter. again this is a process of extraction and not cooking so low heats! be sure to pay attention to the under pot and be careful of  separating the 2 pots as the stem can burn pretty bad! You will allow for it to remain heated for a minimum of 4-6 hours again the longer and lower temperature will result in a more flavorful and quality product. After stirring and extracting for the minimum of 4-6 hours it is now time to take your cheese cloth strain into a tupperware container and allow to solidify while occasionally stirring until solid enough to let stand and not separate.

30 grams of fine ground flower

4 sticks of butter / 1 lbs (unsalted)
